Kısır – Authentic Taste -Turkish Bulgur Wheat Salad Recipe

This salad is one of my and my husband´s favourite salad. It is healthy, less than 20 minutes to prepare, totally vegan and it is a perfect side dish for grills and/or vegetarian meals. Also you can have it just as a small main course for small hungers.

RECIPE (For 4 People)

Ingredients

  • 200 grams (2 cups) of fine bulgur
  • 200 ml (1 cup) of hotwater
  • 2 tbsp tomato paste
  • 2 tbsp red pepper paste (optional, if not wanted then just more tomato paste
  • 2-3 tbsp of olive oil
  • 1 teaspoon salt
  • 2pcs lemonjuice
  • 3-4 tbsp pomegranate syrup
  • 6 green onions, thinly sliced
  • 1/2 bunch parsley, thinly sliced
  • 1/2 bunch freshmint (optional)
  • 1 garlic clove, pressed or very finely minced (optional, I do not add)
  • 1 cucumber, small-size sliced (optional, I do not add)
  • Salz
  • Sweet red pepper pulver
  • 1 teaspoon of chilli pepper (optional)

Put the fine bulgur in a large bowl and pour hot water over it.

Cover it with cling film and wait for the bulgur to swell. After the bulgur has swelled for about 10-15 minutes, mix it well to make it grainy.

Add tomato paste (chili paste, too if desired) and mix it a little. Add olive oil and stir it again.

Include salt, sweet pepper, squeezed lemon juice, and pomegranate syrup. You can also add chili pepper now if you prefer. Stir it gently.

Chop the spring onions and parsley into small pieces. If you wish to add mint and cucumber, chop them as well.

Finally, after adding the chopped spring onions and parsley and mixing, your kısır is ready to serve. You can now incorporate mint and cucumber according to your taste.

Serve it with lettuce or any other ingredients you like.
